Using the leafy green tops of the beets is a a super easy way to make a pesto.
1-2 cups of washed and chopped greens with 2 inch stems
1-2 tsp of zest of lemon
juice of half a lemon
1-2 tsp salt
1/4 cup olive oil
1/3 cup parmesan cheese freshly grated
2 Tbs walnuts
Using a food processor or blender, grind the walnuts lightly. Add the lemon zest, lemon juice, greens, salt, cheese. Begin to blend, pouring in the olive oil to help bring the pesto together.
Notes: adjust the seasoning of the salt and lemon juice to taste. For a dairy free version, you might try nutritional yeast instead of parmesan, in a smaller ratio to begin with as it has strong flavor.
