Beet Juice

A healthy morning boost that is vibrant and fortifying.

3 red beets, rinsed with ends cut off

1 green apple, removing the seeds

1 orange, peeled

1 piece of fresh ginger, about 1 inch in size

2 carrots, rinsed

Add all the ingredients to a juicer. I juice the orange at the end, to assist any last pieces in the juicing basket to flow through.

Makes 2 servings, about 6oz each.

Bonus - use the beet top greens to make a pesto. The greens are full of healthy vitamins and minerals!
